I love shopping my local 99 Cent Only Stores for many reasons; one is I can find unique ingredients at a great price. Take for instance the jar of “Sweet Hot Red Chili Sauce” I purchased and it’s made with Real Sweet Hot Chili Peppers as the first ingredient on the ingredient list! That’s impressive!
I had no idea at the time what I would use it for but knew it inspired me enough to get the creative juices flowing. And sure enough it did! I was in need of a quick appetizer for some guests and decided to make a Crab Salad with the imitation crab I had also bought on that same trip, and that chili sauce gave it the perfect “Kick” of flavor it needed.
In fact everything I needed for the crab salad I purchased from the 99 Cent Only Store and was on hand, waiting to be combined together into something delicious.
Here is my recipe for “Kicked Up Crab Salad” Great as an appetizer or even a light lunch, dinner or snack. Serve it up with your favorite crackers or perhaps some New York Bagel Chips, always in abundance at your favorite 99 Cent Only Store! Enjoy!
1 cup of mayonnaise or salad dressing, whichever you prefer. I personally like mayo.
1 tablespoon of honey
2 tablespoons of sweet hot red chili sauce
4 green onions of chopped fine, save some of the chopped green tops for garnish.
3 celery stalks diced
1 8oz. package of thawed imitation crab meat, chopped in small pieces.
Salt and pepper to taste (sea salt and fresh ground pepper preferably, but table salt and pepper will do just fine too)
1.In a bowl, combine the mayonnaise, honey and sweet hot red chili sauce, season with a pinch of ground sea salt or table salt and fresh ground black pepper.
2.Add the onions, celery and crab, and mix well. Season again to taste with salt and pepper if you prefer. Garnish with green onion tops and keep refrigerated until serving. Makes about 2 ½ cups.
